Eecole Copen, MS, RD, LD, LMT obtained her Masters in Nutrition from Bastyr University in 2004 and finalized her Registered Dietitian training at Oregon Health and Science University in 2005. She completed her training as a massage therapist in 2012 from East West College of Massage. She has worked as a sustainability coordinator for the food and nutrition department of a hospital for 11 years, helping them purchase sustainably grown foods and connecting health care practitioners with food as medicine. She has also been teaching nutrition and cooking classes at Portland Community College for 7 years. Her clinical nutrition focus is on clean eating and helping clients decrease symptoms of IBS, SIBO through dietary change and Chi Nei Tsang, a Chinese abdominal massage technique she studied in both Thailand and Portland.
